Berry Banana Protein Pancakes for Littles

This is one of Kai’s favorite breakfasts! He goes crazy for pancakes, and I’m happy to load him up with these clean ingredient antioxidant packed breakfast! I normally meal prep these for the week and freeze them, popping a few out every morning when I need them…convenience is key in motherhood!
Ingredients:
1.5 cups of Berries
1 Banana
½ cup Unbleached All Purpose Flour
½ cup Cottage Cheese
1 Egg
1 tsp Baking Powder
2 tsp Maple Syrup
Recipe:
Combine all ingredients into a blender or food processor. Blend until smooth.
Heat a frying pan over medium heat, adding a small amount of butter or coconut oil to prevent burning / sticking.
Pour some batter into the pan to form the pancakes, when bubbles start to appear on the surface flip the pancake and cook until both sides are golden brown.
Top with extra berries or maple syrup.
